fix: Mount entire searxng directory instead of individual files

Simple and robust solution:
- Mount ./searxng:/etc/searxng:rw (entire directory)
- No entrypoint/command overrides needed
- Both settings.yml and limiter.toml are included
- SearXNG uses its default entrypoint
